Flourless Monster Cookies (Crispy Edges, Chewy Centers)
This recipe is a little different from some of the others I’ve shared so far. I care deeply about wellness and nourishing foods, but sometimes we just need cookies!
What I love about this lifestyle is that enjoying a treat doesn’t have to mean harmful ingredients like seed oils or artificial dyes. Once you start using real, simple ingredients, it’s easier than you think to make classic desserts that still feel comforting, with a more mindful approach.
These flourless monster cookies are rich, crispy, chewy, and deeply satisfying. They’re made with pantry staples I already keep on hand, and they come together quickly when you want something homemade but uncomplicated. Perfect for sharing, freezing, or keeping a few tucked away for those “just one cookie” moments.
Ingredients (Makes 2 dozen cookies)
2¼ cups old-fashioned rolled oats
1 cup creamy peanut butter
½ cup unsalted butter (1 stick), very soft
¾ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1½ teaspoons vanilla extract
1 tsp baking soda
½ tsp salt
½ cup chocolate chips (I use Enjoy Life brand)
½ cup milk chocolate gems (UNREAL brand)
Instructions
Preheat oven to 350°F.
Line baking sheets with parchment.Cream fats and sugars
Beat peanut butter, butter, and both sugars for 2–3 minutes until very smooth and glossy.Add eggs + vanilla
Mix just until incorporated.Add baking soda + salt
Mix gently.Stir in oats by hand until combined.
Fold in chocolate chips and chocolate gems.
Shaping
Scoop 1/8 cup (2 tbsp) dough per cookie
Place on baking sheet
Flatten to about ¼-inch thick using your palm or the bottom of a glass
Baking
Bake 9-10 minutes
Cookies will spread and look very pale
Centers should still look soft and slightly glossy
They will bake more on the pan while cooling.
Let them cool for 10 minutes on pan before moving.
Enjoy them slightly warm, with a glass of milk, or tucked into the freezer for later. Simple, comforting, and made with ingredients you can feel good about. 🤍
